SUMMARY:North Italian Après-Ski\, a Hands-On Cooking Class with Leah Guadagnoli
DESCRIPTION:Baby it’s cold outside. Let’s warm up with a Northern Italian après ski class! Together we’ll learn some of Italy’s most delicious winter dishes\, including: \n\nCasunzei\, a beet and ricotta ravioli with poppy seed butter from Cortina\, the famous ski resort town in the Dolomites.\nPolenta Concia con Salsa di Fungi\, an enriched corn porridge finished with lots of cheese and topped with sautéed mushrooms\, typical of the Alpine regions of Valle d’Aosta and Piedmont\nFrico Croccante\, essentially Parmesan crisps\, of the Friuli Venezia-Giulia region– the perfect snack while we cook together.\n\nIn the spirit of the Italian gastronomical ethos of comida nostrana (local food)\, we will utilize beautiful ingredients from our neighboring farms and producers in and around the Hudson Valley. After relocating to Portland\, Oregon to live in an Ecovillage and try her hand at growing food in community\, a cross-country road trip completed the circle with a move back to upstate NY. Here she is connecting with farmers and chefs again in her work at Zinnia’s Dinette and HGS Home Chef.
